Hello Jonathon,
You can change the wait time from the Screen Saver Settings panel. Below the list of screensavers you'll find "Wait:" and a number for the minutes Windows will wait.
If it's grayed out, it's possible an administrator on your computer has disabled it. See the "Group policies" paragraph here: What is a screensaver timeout, or wait time?
